Located at 40 Abbeville Road in the centre of Abbeville Village, SW4. Bistro Union is owned and run by Adam Byatt and his team behind Trinity, Clapham Old Town

Union is a British neighbourhood Bistro where all things quintessentially British take presidency. The kitchen is small so the bar houses a food preparation area manned by a cook preparing ten daily changing bar snacks listed on a drop down brown paper roll.

Adam’s Ethos
Adam Byatt has a vision, an ethos and a determination to create his restaurants just as he wants them. Adam selected Salix as his partner to deliver the design and build programme based on his previous experience working with Rod Cullen. He likes Rod’s hands on, get the job done approach, along with Salix’s reputation for working with top London restaurants.

The Challenge
Adapt a small kitchen with some inherited equipment into a kitchen fit for an ambitious restaurant. As always there was a tight deadline but we had a great team; an experienced interior designer for the front of house experience, Salix to deliver the engine behind the scenes and an owner / chef with a clear vision and ethos.

The Process
It was Salix’s role to work closely with Adam to develop his ideas into workable designs; the design and build process was very hands on working with a design as we go philosophy. Key to the success of the programme was how Salix managed the builders and contractors to deliver Adam’s ethos.

Salix’s Rod Cullen explains,” The design and build projects are normally very fast track, but they enable us to be really involved, hands on and creative”.

Programme: 5 weeks
Including the removal of all of the old and existing equipment, design and builders fitout for the new spaces, delivery, installation, commissioning and handover.
